one more week

well, added the clearing agent and bentonite and a week later looks awsome! tryed a taste last night (a week befor filtering and bottleing) and wow, turned out to be a zin! and a sweet zin, witch it wasint exactly what we were going for with the sweetness of it, but it adds a nice flavor befor that zin bite at the end. the aroma is total awsomeness and smooth. no harsh mouth wash like vapors haha. and the color is great, clear with a tint of green/yellow in it. cant wait till next monday!

new batch

The wild white is on the way. a few more rackings, 6 more weeks then filter, clear and bottle. no tweaking on this one so it should come out great! all brand new vats and fermentation vessels in temperature controled room (next to the humidor) haha. the aroma is very fruity and color is kinda a milky green right now. good news is the balling, gravity and potential alcohol is in the region compared to the apple and honey at this stage. looking forward to seeing how it comes out!

with our previous batches made, and a little tweeking, we are now set to make 20 more gallons of our home made wine. we are gonna go with all grapes this time from our near by farm nehbors and probably mix a batch. dont get me wrong, although high in octaine (20 and 22%) and a little harsh, the apple was a favorite among fammily at the dinner table, and the honey was the same among freinds (at partys haha). the poping of the corks added to the fun with the honey. didnt mean for it to be carbonat… Continue
